When summer Steamboat visitors begin to trickle in later this month, they’ll have a new surprise waiting for them along the banks of the Yampa River. The short lived Sweetwater Grill has now been transformed into the much touted Aurum Restaurant.
He calls himself a modern day prospector, and no doubt about it, he struck gold with Aurum’s fantastic location along the river. Aurum is Latin for Gold and marks a golden opportunity that new owner Phil Armstrong just couldn’t turn down. And we’re thrilled to welcome him to Steamboat.
His restaurant brings a fresh and fun approach to fine dining. The wines by the glass are on tap (yes on tap!) and were blended specifically for Aurum by the winemaker, Joe Buckel, at Sutcliffe Vineyards. The rest of the cellar comes from wine regions around the world, but we especially adored the Cinsaut, the winery’s varietal that is quite similar to a pinot noir. Each plate has been prepared with a pairing in mind, so don’t be shy about asking your server about what would go best with your entree choices.
Because we’re in cattle and pork country, yet we were dining alongside the rapids of the Yampa River, we went with the ultimate surf and turf. Crudo of hamachi and tuna, truffle ponzu, daikon, ginger oil and the local Duroc pork chop, pork belly, horseradish whipped potato, kale with salted caramel peach jus. To say it was fabulous is a huge understatement. And we topped it off with a dessert of home made sugar dusted donuts.
The service was impeccable, yet very approachable. The servers, the hostess, the chef, the dining room manager and the owner all go to great lengths to converse with the crowd – ensuring that the energy is fun and the diners are enjoying the full experience.
The live music at Aurum is just as approachable as the rest of the Aurum experience. On Thursdays, Fridays and Saturdays they’ve got acoustic singer/songwriters playing from 4pm-6pm — no need to stay out late to enjoy a few tunes after a fun day in the sun.
Aurum has a kids menu as well, though, it is decidedly adult. The deck is welcoming to all ages and who doesn’t love listening to the river rush by? If there’s a chill in the air, the fire pit is ablaze for fireside chats and noshing.
